Meet Martin Avitia | Chef/owner – Sitios Aluxe’s Table

We had the good fortune of connecting with Martin Avitia and we’ve shared our conversation below.
Hi Martin, is there something that you feel is most responsible for your success?
I think the most important factor behind being successful in anything, is being able to acknowledge criticism and work at making what you want, what others want. Sometimes your vision is very one sided and doesn’t fit with the community but you can’t see it when you are trying so hard to do what you want. Its also helps to know that it is ok to be scared. If your not scared, your not going 100% and you’ll probably fail. When your scared, you have to keep going to stay afloat. Like when your falling and you have to run as fast as you can to get back up
Let’s talk shop? Tell us more about your career, what can you share with our community?
I think The culinary world is so deep and endless but also very hard to be different and do something new. There are millions of chefs trying to do something new all day, everyday and its hard to do something “New”. I think what sets me apart is that I dont think I need to follow certain rules that cuisines have. I have a Latin background but I use different techniques from around the world to elevate what I’m cooking. I love understanding and fully respect why certain cultures make what they make. It makes the culinary world whole. It is not just the French techniques that we learned at culinary school. It is all the differences and similarities from every culture. My brand is all about learning about your culture through your food and bringing that certain cuisine into the lives of anyone who eats
Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Firstly I would go to Cock n Tail for drinks and to listen to live music. During the week, alot of local artist go there and just play! We would then eat lunch at Otro Cafe. I have never been disappointed with the food and service there. We would then go to Snoh for shaved ice and boba milk tea. They actually make fresh tea, not just powders. We would have dinner at Ocotillo because they have good food, great outdoor atmosphere and great cocktails! Fàme caffe would be next for brunch. I enjoy the brunch cocktails and the dishes are always delicious and light. We then would go to H-Mart to shop around and look at all the great quality produce. They have a bunch of little food stalls that actually represent the different aspects of Korean and Asian food pretty good. The bakery there is also great for a togo snack and coffee. I would next go to my past job at Meritage an Urban Tavern for dinner. I personally know the high level of cooking and great produce they have there. Always changing the menu to reflect the seasons. Besides food, the only other hobby I have is cars so we would go to k1 Speed go-kart. After that rush, tacos from Ta Carbon are a perfect pairing. They really make sure everything they do is great and authentic! If there is enough time in the trip, I would definitely go to Chantico. They do a great modern, upscale representation of traditional Mexican food and the ambiance is great
The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
My wife, Samantha, has been there with me all along the way and has pushed me to do more everyday! She is there to tell me when things are not right and that I need to do something different. She has helped me with all the graphics and technological aspects of the business and just keep my moral high. She is amazing around people and pushes me to match her energy and overall good vibe
