We had the good fortune of connecting with sudipto & chaitali and we’ve shared our conversation below.

Hi sudipto & chaitali, is there something you believe many others might not?
its a general belief that for any retail business location is very important, specially for a restaurant…this thought leads to acquisition of prime real estate….for Hunger square we went the unconventional way and off the main stretch of the busy downtown and relied on the quality/service/word of mouth and digital space.

Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
Hunger Square is a “Dhaba Style” Indian restaurant serving home style indian meals to travellers visiting the Grand Canyon or Northern Arizona…we work on the concept of micro menu which changes everyday according to the availability…focus on authentic home style recipes and quality without frills is what sets us apart from others. We try and incorporate the old grand mothers recipes from various parts of India in our many to add variety and awareness of various preparations that are not so common in Indian restaurants in the western world.
the journey of Hunger Square started from a cloud Kitchen in Chandler in 2020 and we moved to a dine in facility in 2021….the journey had its own challenges …but all seemed worth from the encouragement of our patrons.

lessons learned – walk the path less travelled….there can be a rough terrain initially but no sooner the journey becomes a cakewalk.

For any brand being rooted and authentic is a primary ingredient for their success story.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
we are on the Route 66 and Williams is the gateway to the Grand Canyon…so a train ride to the Grand Canyon from Williams station is a must, for families with kids Bearizona and the Deer park is a must see, a walk in the historic downtown with Wild west shows happening every evening….besides these there are many lakes and trails nearby for the adventure seekers.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
Starting an ethnic Indian restaurant in a small town like Williams had its own challenges, from sourcing of inventory to staffing…and a big shoutout for our success story goes to the locals of this town , special mention for the Dilanchian family/Menna family /Hudspeth family and Sunil Patel family and Devender Patel . what started as helping locals have turned into a strong bond of friendship.
