We had the good fortune of connecting with Michal Prevor and we’ve shared our conversation below.

Hi Michal, we’d love to hear more about how you thought about starting your own business?
I wasn’t setting out to start a business. Babka Bailout was created at the beginning of the pandemic to help a friend pay rent. Our babkas became so popular with the community that we couldn’t stop baking and creating a business provided a full time job for Carmen.

Alright, so let’s move onto what keeps you busy professionally?
At Babka Bailout we have given a new twist to the traditional babka. Babkas historically are either chocolate or cinnamon flavored. Our babkas are inspired by my international upbringing and Jersey City’s diverse population. Our flavors include dulce de leche, ube nuella oreo, brie guava, zhaater feta mozzarella , cereal milk and of course we also offer the traditional chocolate and cinnamon.

The food business is extremely challenging and at the same time extremely rewarding. It hasn’t been easy to establish a food brand and along the way build out or own brick and mortar. I have learned that it takes real grit and then some more to be in this industry.

Our story began as an effort to help a friend and our goal at Babka Bailout is not only to bake delicious babkas but to always give back.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
New York city which is 15 mins away from Jersey city would be the perfect place to spend a week. We would go watch some fun shows, eat at amazing restaurants (Misi, Thai Villa, Bond St, Il Bucco, and many others) and we would definitely spend a day the the spa on Governor’s Island. The Met, Guggenhein, Brooklyn Art Museum would also be included in our itinerary.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
My parents have been my biggest cheerleaders throughout this process, always offering advice and help along the way.
