We had the good fortune of connecting with Fanny Hicks and we’ve shared our conversation below.
Hi Fanny, we’d love to hear about how you approach risk and risk-taking
I’m naturally a cautious person who avoids risk. Even though I’ve wanted this business for decades I didn’t rush the process. I spent years working on my craft so that I would be able to offer a product of unique value. I also was able to learn from the many businesses where I worked what customers would respond to, how to operate effectively, and what it was I really enjoyed doing. I’m glad I took the time to be as prepared as possible. Nothing is without risk, but by being patient and waiting for the right opportunity I have been able to avoid a lot of the pitfalls I see other new businesses struggle with.

Alright, so let’s move onto what keeps you busy professionally?
Everything about the bakery is a reflection of my personal tastes, style, and my history. I painted the art on the walls, designed the logo, collected and tested the recipes through numerous jobs, and make every item myself. It is as far from mass production as you can imagine, and people really respond well to that. My customers can see me working and talk to me as I’m pulling pastries from the oven throughout the day. Everything is made fresh, and it’s not uncommon for your cinnamon roll or cookie to still be warm from the oven when you get it. We’ve become so accustom to manufactured foods filled with preservatives and sealed in plastic that many people have forgotten how good a fresh pastry with quality ingredients can be

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
The best place to eat in town is hands down Capital Farms. The monthly dinners are some of the best meals you can get in the state. A visit to Villifane Studios at Vulture City Ghost town is a must, the whole ghost town is a delight but exploring the sculptures in the studio space they have there is one of my favorite things to do. The Halloween display was especially amazing. Serape Bleu is without a doubt my favorite store in town and my go to for gifts and clothes.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
I owe a great deal of thanks to my husband. He has moved across the country with me multiple times as I’ve pursued my career. He helps me navigate the paperwork side of operations, and most importantly he encouraged me to take this step in my career
