Meet James Delarosa | Chef / Dreamer

We had the good fortune of connecting with James Delarosa and we’ve shared our conversation below.

Hi James, we’d love to hear more about how you thought about starting your own business?
My philosophy has always been about the inner balance with each dish , seeking a medley of flavors that allowed for a visceral experience rather just one that met one of the eaters senses . I seek to do emulate this philosophy by enameling my food with threads of different Latin cultures , my mind wanted to find a familiar way to reach the average eater with essences and zings of Latin food . I want to show the world the beauty of the Latin palate , this heavily influenced my thinking processes while developing my brand Fresco and Fryed . Balance is our philosophy.

Alright, so let’s move onto what keeps you busy professionally?
My journey is rather unconventional , I come from a single mother household and lost my father at an early age . This played an implicit roll in my pursuit of what I believe to be peace . I learned at an early age that food is the driver to the soul , I cooked for my siblings at a very young age , it allowed me to cope with what I didn’t understand about my circumstance. The beginning of my young adult life had immense obstacles, I was incarcerated at an early age and knew that this was the cycle I wanted my life to tumble into . In 2011 when released , I began to completely evolve away from what pained to me, and food was my gentle savior. I first started as a farmer as I became enthralled with the beauty of natural ingredients. It in essence, saved me and distracted me from my past. Food has allowed me to believe that the creations of anyone saw can free you and bring you nirvana . I’ve learned that everything starts with merely an idea a genesis of who you want to be., it starts with a true belief that anything is possible, my brand emulates, the balance that I seek every day to continue my pursuit to better myself and my family. I want the world to know that there are peaks and valleys, and if we navigate with our hearts, first, anything truly is possible, your dreams are waiting for you to be ready. I’ve learned that with patience and love can pave the way to your dreams.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
First we’d get a coffe and the tight know coffe truck in Redmond , then head to bend and visit the stunning views at drake park, maybe get a workout in there . Then I would take them to spork my favorite eatery in town , and have there shrimp tacos , INSANE!

Who else deserves some credit and recognition?
I want to dedicate my continued pursuit of food , to my amazing wife who truly believed in my wild dream . Also to my sweet and spunky children . My life is dedicated to you all .
