We had the good fortune of connecting with Jessica Gallegos and we’ve shared our conversation below.

Hi Jessica, we’d love to hear more about how you thought about starting your own business?
I started this business while I was very pregnant with my son who is now 7. I wanted to be able to stay home with him and be the one caring for him which was difficult to imagine as I am a single mom. Thankfully I have a supportive family, my parents have been instrumental in my success. I Initially started with cakes and other desserts as I have always loved to bake. After watching ALOT of food network during my pregnancy and my sons infancy I discovered decorated cookies. I loved the idea and wanted to give them a try and I was hooked. I found something I truly enjoyed. It was a creative outlet for me, that wasn’t always easy to achieve in other baked goods. Customers started rolling in immediately from the first set of cookies I attempted, and it just grew from there. I was able to be with my son who was a baby and still be able to work. It was a blessing that I am truly grateful for and it would not have been possible without the support of my amazing parents and the drive that my son gives me to be a role model for him.

Let’s talk shop? Tell us more about your career, what can you share with our community?
I am a cookie artist. I say artist because it is art. Instead of paper or a canvas my canvas is a cookie. A cookie I have carefully crafted using high end ingredients. My recipes have been carefully developed by me. I am always improving and coming up with new flavors, but my signature recipes are tried and true and something I am highly praised for amongst my customers. When it comes to the details, I believe that is what sets me apart in addition to the taste and texture of my cookies. Everything I make is custom designed and done free hand. I do a lot of character work and other designs but unlike most cookier’s I don’t use a projector or edible printed images. Everything is freehand and done by me. Most of the time I even draw and hand cut cookies because there isn’t a cutter for what I envision. I use decorating tools like airbrush and dusting for dimension, I hand paint details, I create all of my own edible transfers and most importantly I pour my heart into every set I do. I love what I do, I love creating something beautiful for the special moments in our lives and I believe it shows and is appreciated. I am a self-taught baker and decorator, I have learned through trial and error and have been developing my skills as a cookie artist for the past 7 years.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Places to eat would be Mi Nidito, Eegee’s, and Casa Valencia. They are delicious and something you can’t find everywhere. I would recommend visiting Old Tucson, Saguaro National Park, Trail dust town, taking a drive to Colossal Cave, Tombstone, and Tubac.

Who else deserves some credit and recognition?
My Son and my family. My son Jacob is my drive, my reason for all that I do. Without him I would be on a different path in life. It is because of him that I strive to be a better version of myself daily. I strive to be a role model for him someone to be proud of and look up to and know he can achieve and surpass every obstacle. In addition to him my parents who have been instrumental in every aspect. My mom Charlene and My dad Peter are so supportive and brutally honest. Without them I would not have been able to even be on this journey. They see the future and my success when it is difficult for me to see it myself. They push me to try more. They help when I am over booked whether it be packaging cookies at 4 am or taking care of my son when I have events or too many orders. They are there form my son and I in every way possible. They helped me start and continue to help me with my business and are the biggest supporters of my success. My son, parents, brothers, sisters, nephews, cousins, tio’s, tia’s, etc. are all supportive and encouraging. They are always advertising my work and supporting what I do. Their pride and support is instrumental in my success and I am forever grateful.
