We had the good fortune of connecting with Lindy Reilly and we’ve shared our conversation below.
Hi Lindy, what do you attribute your success to?
I attribute our success to our attention to consistency, quality and solid customer service. We care about every detail from the moment someone walks through our doors. The food should come out of our kitchen the same every time and we hope its one of the best burgers they have had. We hope that by the end of their visit with us, they feel like friends who want to come back and our regulars are like family.
Let’s talk shop? Tell us more about your career, what can you share with our community?
I started Lindy’s on 4th in 2005 and just went through the grind everyday banging out burgers. We would have a 2 hour wait list. It wasn’t easy. the growing pains that being on TV brings and the constant trials of running a restaurant are life changing. A chaotic growing experience. Having the chef community offer guidance and advice was helpful during those challenges. Since opening Thunder Bacon Burger Co three years ago, I have learned a lot. Burnout is real. If you have a toxic kitchen environment, you need to look at yourself first. Your employees are more than just people who work for you. Customers can taste when you care and cook with love. Watch out for family and whiskey doesn’t fix as much as you think it does. I have fought very hard to be where I am and have sacrificed a lot to be here. I love what I do and I strive to put out the best burger I possibly can.
Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
We’re foodies and we don’t get much time away from the restaurant. But when we do we always try to support any new local businesses. Our oldie but goodie list is The Parish, Charro Steak, Tacos Apson, Indian Twist, Zio Peppe, Wild Garlic Grill and of course Rollies, where I proposed to my wife. Who doesn’t love tacos? If we get enough time to hang out for a bit, Che’s Lounge, Saint Charles Tavern, Crooked Tooth Brewing, and Danny’s Baboquivari are some great spots. We would definitely plan a day to check out Sabino Canyon and any U of A game that might be going on.
Who else deserves some credit and recognition?
The list of people who have helped me get to where I am today is long. But if it weren’t for Justin Stewart, I don’t know that I would have found the love & passion for food. We were roommates and he gave me my first shot at being a line cook. Even though he was my mentor, he let my crazy ideas come to fruition.
