We had the good fortune of connecting with Erica Palfrey (Chef Kali) and we’ve shared our conversation below.
Hi Erica, we’d love to hear more about how you thought about starting your own business?
I originally started Kali Café because it kind of just hit me one day that working a corporate job every day just wasn’t enough & the fact of having to ask permission for time off whether it be personal or for family just didn’t sit right with me. I always knew I had a genuine love for cooking so I started utilizing my interest in cooking to make money instead of a corporate job.
Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
I believe what sets me apart from others and it’s also what got me to where I am today is being different. I try to come up with creative ideas that draws attention and allows me to utilize my creativity. What I’m most excited about is being able to cook for Moneybagg Yo. He’s one of the biggest rappers in entertainment right now and it was overall an amazing experience. I believe I got to where I am because of my love for what I do. When you genuinely love what you do it shows in your art. It’s definitely not easy at all overcoming challenges can be challenging but you just have to do it. You have to want to win more than the difficulty of the challenge in front of you. A valuable lesson I’ve learned is even on the days you don’t feel like it do it anyway and put God at the beginning, middle and end of everything you do.
If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
I don’t really get out a lot here in the valley I’m from San Diego, Ca so we’d definitely drive home visit the beach, drive up to LA do some shopping at the slauson. To me San Diego has the best taco shops so a California surf and turf burrito is definitely on our lunch menu with green salsa. Lumpia and pancit it a must have when in Cali. La Jolla cove it a beautiful beach. Downtown San Diego has many different attractions so we’d have fun there.
Who else deserves some credit and recognition?
Most definitely God. My sister, friends and various family members all have contributed to my success in their own special way. Also Kali Gang (my customers lol) as well because without their continued support Kali Café wouldn’t continue to grow. & lastly another local black owned business named Southern Fried owned by none other than Jason Halloway. There was a season where he blessed Kali Café with allowing me to run my business out of his which resulted in my following growing bigger and more customers so I’m most definitely grateful.
