We had the good fortune of connecting with bryan leon and we’ve shared our conversation below.

Hi bryan, what was your thought process behind starting your own business?
The thought process started during the pandemic we are a family base company at of New York New Jersey area when Covid hit the city was completely shut down and I did not know when business would reopen so I decided to take a chance and leave the east coast and expand the business to other states we settled on Arizona because my girlfriend is a travel nurse and had an assignment in Phoenix. After doing some research I reached out to a couple local breweries asking them if they’d be interested in having us pop up and serve food at their location. The first event I ever had in Arizona was thanks to the people at RIFT TAP ROOM in Scottsdale. After that first event word spread and other breweries started reaching out to us asking if we can come set up at their location. The rest is history people had a great response to our food and thanks to that now we have a Residency at Luckys bar in downtown Phoenix and we looking to expand to other locations. I would like to think the city of Phoenix in the state of Arizona for the overwhelming love and support as we continue to grow The best is yet to come.

What should our readers know about your business?
We are a small family owned business based out of New Jersey. my parents started the company 30 years ago in New York. they started out selling Colombian style arepas on the streets of Nyc. people immediately loved the food and with that Mozzarepas took off now we work with three major festival production companies in New york doing a Events in all 5 Burroughs. What sets us apart is our secret family recipe which was passed down onto my brothers and me from my parents. I’m most proud of the overwhelming response that we have received and. Joy on peoples faces when they try Mozzarepas for the first time. Looking towards the future I’m excited about expanding our locations so that people can try out delicious food in Arizona and all 50 states. I learned everything I know in business from my parents hard work ethic as immigrants from Colombia. Seeing them work long hours and watching their hard work pay off en stilled in me that entrepreneurship mindset. It was not easy by any means, lots of hard work and dedication but more than anything is being consistent and persistent.. we overcame the challenges by having a strong foundation and building a strong team. People were also very welcoming towards us and other food trucks help guide us along the way being in a new state. In order to achieve your goals you need to take a risk, get inspired and have a good team around you to help you grow. I would like the world to know that anything is possible with hard work., persistence, and not afraid to take risks. As a first generation American I want to show that it is possible to obtain the American dream that our parents came in search for. I want to make Mozzarepas a household name one day.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
I would start my day off with a sun rise hike. Then getting breakfast at farm and craft in old town Scottsdale, enjoying their delicious food and drinks. Then walking checking out the shops around. Stop at one of the many breweries and tap rooms that Arizona has to offer. Then hit up the art district in downtown Phoenix, then walk over to Luckys indoor outdoor with their awesome back patio. Go to dinner at Postinos, then catch the sunset on the way back home.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
First and foremost I would like to shoutout my parents for instilling a hard work ethic in me and my two older brother. They immigrated from Colombia to the United States in search of the American dream and it paid off. I would also like to give a special shout out to the guys from WILDFIRE food truck for introducing us to local breweries and ESPECIALLY the guys from RIFT TAPROOM in Scottsdale they were the first people to have us setup when we arrived in Arizona I will forever be grateful for that!
