We had the good fortune of connecting with Domenico Cavallo and we’ve shared our conversation below.

Hi Domenico, Let’s talk about principles and values – what matters to you most?
Family, for me, is the core of everything around me. I was blessed to grow up in a traditional family where I learned at an early age that every member of the team needs to work hard and do there a part for a common goal. Happiness

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
Mimi Forno Italiano is an authentic Italian restaurant inspired by my life growing up in the Mountains of Colliano a small town in Salerno south Italy. As a child, I spent most of my time helping my father in the harvest, but when I was not helping my dad I was in the kitchen alongside my mother and grandmother. This is where I developed an exquisite taste for good quality and natural ingredients in food, Cooking became a part of me a true passion I could say. Mimi Forno Italiano focuses on providing customers with the best quality from organic products directly from my own farm CAVALLO VINEYARD and imported Italian products. The Pizza oven was build and imported from Napoli, Italy. I am extremely proud of being apart of a community that supports small local businesses that have given me the chance to be a part of some of their most important events trusting me to provide delicious food, drinks, and an atmosphere where everyone enjoys themselves. Hard work, determination, and a strong will power have been some of the tools that have helped me become successful, during this journey I encountered many challenges but I believed in my idea and knew that it was all possible, I would like for everyone to know that this too was once just a “dream” that I turned into a reality, you can also turn your dreams into reality don’t be discouraged by failure.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
If one of my best friends from Italy was visiting for a week I would probably start the week off by driving down to the Grand Canyon National Park on Monday morning so he could see one of the worlds natural 7th wonder in person but first, we need to stop at 3’S Co Coffee bar for a cup of their fresh brew coffee and one of theirs delicious waffles on Tuesday I would follow this day with nature by stopping in Sedona were depending on the time of year our visit lands on we could visit the Slide Rock state park, go on a pink flamingo excursion or simply watch the pine trees and snow if it happens to be during the wintertime. On Wednesday I would have a day in the city where I would show him downtown, maybe we could visit some of the museums downtown and have some lunch. I would definitely take him to Tempe town lake to sightsee and walk and enjoy the sunset on Thursday night. Another obligated place to visit is Andreoli’s Italian grocery with my dearest friend Chef Giovanni Scorzo, this is the place where I eat as I was eating at home, then we are going to Old Town Scottsdale for the nightlife on Friday night. As the atmosphere is amazing on weekends here. Saturday can be a day dedicated to my friend so he can maybe go shopping around the city after we are heading for a drink and say Ciao to my friends Luca, Sandra and Roberto the owners of Forno 301 a modern Pizzeria with an amazing atmosphere. On Sunday we would have Sunday dinner at home where I would cook a number of dishes and we’d talk and drink to pass time to give my friend a deserving farewell.

Who else deserves some credit and recognition?
I would like to mention that all of this couldn’t be possible without the help and effort of my amazing staff and all of the amazing customers at Mimi, especially those that have now become my friends. Words could not express the amount of gratitude I have for all of the love and support I’ve received from friends, the Laveen community as well as the rest of the valley throughout my journey as a restaurant owner. I would like to give thanks to all of those who’ve I’ve encountered throughout time for giving me the opportunity to show them l’autentica cucina Italiana. My dream of having an authentic Italian restaurant has now become a reality that has been fulfilled with the help of my staff, customers, friends, and most importantly to my dearest friend Giuseppe Joe Fiorucci.
