We had the good fortune of connecting with Kyle Hollenbeck and we’ve shared our conversation below.

Hi Kyle, can you walk us through the thought-process of starting your business?
Six and a half years ago myself and Michael went to Chef Tom and told him we should start a food truck. Chef Tom had Graduated from Northern Arizona University with a bachelors in Hotel and Restaurant Management in just 3 1/2 years, graduated the Ace Program at Culinary Institute of America and was finishing a two year apprenticeship program at the Greenbrier in West Virginia (Known as America’s Resort) when we asked this of him. Put it this way he could have went and worked anywhere. It wasn’t until he came out and we took him to a food truck friday in downtown phoenix where he saw the potential. He knew we could do this and better. I had been in advertising for a long time, working for different tech companies (Yelp and LivingSocial) and i was ready to be my own boss.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
We started out almost seven years ago with a dream and one food truck. We have now grown the AioliBurger.com brand into four food trucks, three brick and mortar restaurants and a catering company. Chef Tom and Myself have also started Moderntortilla.com and Oakwoodfirepizza.com two successful (multiple truck ) food truck and catering companies. We had several challenges in the past seven years. From trying to start new brands to food trucks breaking down to employees quitting on us right before a large event. You name it we dealt with it. We have always worked together as a team to make things happen. We learned after a while that if we stop trying to put a square peg in a round hole then things will be a lot easier. Our brands are gourmet ingredients on comfort foods at an affordable price. We pride ourselves on offering a fine dining customer service experience off food trucks!

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I have lived in Arizona my entire life and if I had a week we would have to go to sedona for sure. If you have not been, you should! We would eat at Elote and most likely have to make our way to flagstaff. There is snowboarding, golfing and hiking depending on the weather but I really enjoy the downtown area there. As far as Phoenix/Scottsdale goes there is some amazing golf here as well as restaurants. There is also some great farmers markets during the weekends.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
My wife and Son most recently. He is only one and we have only been married two years but they are the motivation for me to continue to grow every day. Early on in starting this my parents and family were super supportive and still are. I appreciate my grandfather for putting me through college and my business partners always having my back. I could not be where I am at without any of these people.
